Raspberry muffins


Today I was craving some muffins next to my usual cup of coffee so I decided to bake these wonderful and delicious raspberry muffins.

Astăzi am avut o poftă de muffins alături de ceșcuța cu cafea și uite așa au apărut minunile astea delicioase. 

 O zi minunată dragii mei și ginduri bune trimit către voi. Foarte curind o sa aveți și rețeta.. :*



Almond muffins



I had some free time today and I decided to visit a very dear friend!! I couldn’t go empty handed of course, so knowing she loves almonds I prepared a few almond muffins to go along with our afternoon tea filled with tales, stories and a bit of harmless gossip. 

Difficulty: Easy

Time: 30min.


Muffin dough – 80gr soft butter, 50gr brown sugar, 50gr white sugar, 80ml milk, almond essence, 200gr flour, 1 spoon of baking powder, 2 eggs and 50gr grinded almonds.

Icing – 100gr soft butter, 250gr icing sugar, 40ml milk and almond essence.


As always, mix the butter and sugar together in a bowl until these become a creamy mixture. Add the eggs and make sure you mix well until they are fully integrated into your previous mixture and then one by one, add the milk and almond essence.

The next step is to sieve the flour and baking powder and only after add these into the mixture. You should now, after mixing well with a spatula or manual mixer, have a thick sour cream like mixture.

Proceed by filling up your bun cases up to three quarters (as shown below) and pop these in the oven for 15-20min. at a temperature of 180”C. As I always mention, don’t forget to check that the muffins are in fact baked before taking them out, as not all ovens work the same and it might take a longer/shorter period for you.


From the given ingredients, I made 18 medium sized muffins, if you want them smaller or larger, the quantities will differ. 🙂

When these are baked and chilled, you can decorate them as you wish with the icing which is easily made. Mix the butter and sugar together until the icing sugar is fully integrated into the butter, then add the milk and almond essence. You should get a creamy mixture and with the help of an icing pipe and different nozzles you can creatively decorate your muffins. I chose a medium nozzle which created this skirt like decoration, however you can chose a different one or even a combination of them.


They are such savoury, creamy and tasteful muffins and aren’t too sweet! They go perfect for any event and are just a delightful addition to even the dullest day!

     Migdalele sunt printre favoritele mele, mai ales in prajiturici si pentru ca maine voi face o vizita unei persoane foarte dragi sufletului meu, m-am gindit ca ar fi minunat sa avem linga ceasca cu ceai ceva deosebit sa savuram…:)

   Da hai sa vedem cum se pregatesc frumusetile astea….

Dificultate: redusa

Ingrediente:- pentru muffins:

  • 80 gr unt moale
  • 50 gr zahar brun
  • 50 gr zahar alb
  • 80 ml lapte
  • esenta de migdale
  • 200 gr faina
  • 1 lingurita praf de copt
  • 2 ouă
  • 50 gr migdale macinate

-pentru icing:

  • 100 gr unt moale
  • 250 gr zahar pudra
  • 40 ml lapte
  • esenta de migdale

Se mixeaza untul cu zaharul pina devine spumos, se adauga ouăle si se mixeaza pina la incorporare, apoi esenta de migdale si laptele. Se cerne faina impreuna cu praful de copt si apoi se adauga in compozitie. Se amesteca foarte bine pina se incorporeaza si avem un aluat de consistenta unei smantani groase. Cu ajutorul unei linguri punem compozitie in formele de muffins cam 3/4 sa fie pline si dam la cuptor pentru 15-20 minute la 180”C. Nu uitati sa faceti testul cu scobitoarea pentru ca nu toate cuptoarele functioneaza la fel.


Din cantitatile date mie mi-au iesit 18 muffins de marime medie. Cit se racesc avem timp sa facem glazura. Mixam foarte bine untul si in 5-6 etape incorporam zaharul pudra alternind cu laptele si eseta de migdale. Ne va iesii o  glazura spumoasa de unt si cu ajutorul uni sprit puteti orna frumos muffinsurile. Eu am ales de aceasta data o forma speciala care creeaza  aceste minunate si elegante fustite.


   Sunt delicioase, cremoase, nu foarte dulci si merg perfect la orice ocazie, fie ea o mica intalnire cu prietenele, un party ori mai stiu eu ce eveniment dragut in viatza voastra…

Lavender cupcakes



Lavender… my darlings, I must say that I absolutely love lavender! I use it all the time and I have lavender all over in my house from lavender flowers, lavender soap and shower gel, lavender washing powder, lavender scented paper for all the wardrobes in the house to the smallest detail such as edible dried lavender flowers for tea and of course BakedTreats!

I just feel that the lavender scent brings about a strong sense of calmness and relaxation in my household and it cheers me up constantly. Not to mention that I drink lavender tea before bed as it relaxes me and my sleep becomes much more peaceful and restful. Anyway, we should move onto this delicious lavender recipe. 🙂

Difficulty: Easy

Time: 30min.


Dough: 200ml milk, one spoon of dried lavender flowers, 2 cups flour, ¾ cups sugar, 80gr butter, 2 eggs and vanilla essence.

Frosting: 25ml milk, 350gr powder sugar, 100gr butter and vanilla essence.


Start off by mixing the butter and sugar together in a bowl until you’re left with a foamy mixture. You can then add the eggs one by one and the milk, which you mixed with the lavender flowers beforehand. Proceed to add the vanilla essence to the composition you’ve created so far and then the sieved flour and baking powder.

With the help of a spoon fill up the cupcake papers (as shown below) with the dough you’ve created. Make sure you don’t fully fill the tiny papers in order to allow enough space for the frosting. You can then proceed to bake them for approximately 15min. at a temperature of 180”C with the oven slightly opened (a very small crack).


During the baking and chilling time, you can make the frosting. Once again, in a bowl, mix the butter (which cannot be cold, but rather at room temperature) with the powder sugar. Add milk slowly, not all at once but rather with some small breaks in between and then add the vanilla essence. Make sure you mix all the ingredients well and voilà you have your frosting.

When the cupcakes dough is completely chilled, you can start decorating as you wish. I used a large mouthed piping bag to create the rose shaped frosting decoration and then I added some sugar crystals which were of course lavender scented! 🙂

   Levandaaa….dragii mei trebuie sa va spun ca iubesc levanda, da o iubesc pur si simplu in toate modurile posibile. Am peste tot in casa levanda, am flori, am sapun, gel dus, detergent de rufe cu miros de levanda, hartie parfumata pentru dulapioare cu miros de levanda  si bineinteles un saculeț generos cu flori uscate de levanda pentru ceai si prajiturirele…Levanda aduce liniste si relaxare in casa mea , ma binedispune si trebuie sa va spun ca un ceai de levanda baut inainte de culcare ma relaxeaza si am un somn profund si linistit…Asa ca a venit vremea sa fac si ceva dulce cu levanda special pentru voi ….

Timp de pregatire: 30 min.


  • 200 ml lapte
  • o lingurita flori uscate de levanda
  • 2 cup faina
  • 3/4 cup zahar
  • 80 gr unt
  • 2 ouă
  • esenta de vanilie

pentru frosting:

  • 25 ml lapte
  • 350 gr zahar pudra
  • 100 gr unt
  • esenta de vanilie

Intr-un bol mixam untul cu zaharul pina se spumeaza, adaugam ouăle pe rind si apoi laptele in care am pus florile de levanda . Adaugam esenta de vanilie si apoi faina cernuta in prealabil cu praful de copt.

Cu ajutorul unei lingurite punem compozitie in formele de briose cam trei sferturi sa fie pline si dam la cuptor pentru aproximativ 15 minute la 180”C in cuptorul incins in prealabil


Cit timp se coc si se racesc briosele facem spuma de unt. Mixam intr-un bol untul care trebuie sa fie la temperatura camerei cu zaharul pudra pe care in punem in 5-6 etape alternind cu laptele si esenta de vanilie. Cind briosele sunt complet reci le ornam dupa bunul plac cu spuna de unt. Eu am ales un spriț foarte mare cu care am facut trandafirași si i-am pudrat cu citeva cristale de zahar cu aroma de levanda..normal…:)


    Sunt absolut delicioase, cremoase si aromate. Va recomand sa le serviti alaturi de o ceasca cu cafea ori ceai impreuna cu cei dragi..

   Ginduri bune dragii mei si spor la prajiturit :*

”You and me” muffins


Eheee…ce ziceti voi de aceasta minunata dragoste??… 🙂 Si ca tot e maine ziua indragostitilor zic sa fim pregatiti maxim posibil sa oferim iubire, sa traim in iubire, sa ne rasfatam cu iubire…totul cu iubire….

Al meu iubit sot iubeste ciocolata, deci nu puteam sa ai pregatesc ceva mai bun de-atit…love with chocolat 🙂

Da hai sa va dau si reteta ca sigur vreti si voi sa savurati aceste minunatii ….deci sa prajiturim..:)

Timp de pregatire: 1h


  • 2 cup faina
  • 2 cup zahar
  • 3/4 cup cacao
  • un virf lingurita bicarbonat de sodiu
  • o  lingurita praf de copt
  • 1 cup lapte batut
  • 1/2 cup ulei
  • 2 ouă
  • esenta de menta
  • un zahar vanilat
  • 1 cup cafea neagra fierbinte


  • 200 gr.unt moale
  • 2 cup zahar pudra
  • 2 linguri cacao
  • o lingurita coaja de lamaie
  • zeama de la o jumatate de lamaie
  • 2 albusuri batute spuma
  • 40 gr ciocolata topita

Amestecam ingredientele uscate, faina, zaharul, cacaoua, bicarbonatul de sodiu si praful de copt intr-un bol mare, normal cernute in prealabil.


Separat intr-un alt vas amestecam ingredientele ude adica laptele batut, uleiul, ouale si esentele


Apoi adaugam mixul de umede in bolul cu ingredientele uscate si amestecam pina la incorporare totala, apoi adaugam cafeaua fierbinte si usor  amestecam pina la incorporare


Pregatim formele de muffins si cu ajutorul unei lingure punem compozitie cam 3/4 sa fie plina. Dam la cuptor pentru 10-15 minute la 180”C incins in prealabil (nu uitati sa faceti testul cu scobitoarea pentru ca nu toate cuptoarele sunt la fel). Din ingredientele date va vor iesii aproximativ 40 muffins normale ori 20 mari.


Cit timp se coc prajiturelele facem crema de unt astfel:

Mixam untul pina devine un pic spumos si apoi treptat adaugam zaharul pudra, care a fort amestecat in prealabil cu caoa, in 6-8 reprize  pina are o consistenta spumoasa. Adaugam coaja rasa si zeama de lamaie , apoi albusurile batute spuma , dupa incorporare totala adaugam ciocolatat topita in 4-5 reprize….iar rezultatul……o minunata crema de unt cu ciocolata…..


Cind sunt complet reci briosele le putem orna cu crema, eu am folosit un sprit foarte mare…pe care il iubesc pentru ca pot face minunate decoratiuni mari si foarte mari..:)  si rezultatul…tadaaaa…..


Sunt delicioase…cu o usoara aroma de menta..cremoase, pufoase….ciocolatoase…..

Muffins with vanilla cream

Timp preparare: o ora


  • 4 oua
  • 240gr zahar
  • 240gr unt topit ori ulei
  • 240gr faina
  • esenta de vanilie
  • 1 lingurita praf de copt
  • pt.crema: 500ml.lapte
  • 4 galbenusuri
  • 100gr zahar
  • 40gr amidon
  • 150 gr unt
  • esenta de vanilie
  • coaja rasa de portocala si zeama de la o jumatate delamaie

Mod de preparare

Mixam ouale cu zaharul pina isi dubleaza volumul si se deschid la culoare, adaugam untul topit, zaharul vanilat si faina amestecata cu praful de copt si cernute in prealabil. Vom obtine o compozitie nu foarte groasa, insa asa trebuie sa fie. 🙂 Punem cu ajutorul unei linguri compozitie in formele de muffins cam 3/4 si le coacem aprox 20min. la 180’C in cuptorul bine incins in prealabil. Din ingredientele date vor iesi fix 24 bucati. Le lasam la racit si cind sunt reci taiem un capacel pe mijloc si umplem cu ajutorul unui pos cu crema pregatita. Eu am ales sa le pudrez cu un pic de zahar vanilat, voi puteti folosi orice decor va place…
ImageImageCrema: Punem laptele la incalzit la foc mic, separat mixam galbenusurile cu zaharul, adaugam amidonul si apoi treptat laptele caldut, Dupa ce s-au integrat foarte bine, punem iar pe foc si cu ajutorul unui tel manual mixam continuu (sa nu se prinda) pina crema se ingroasa. Dam deoparte, adaugam untul si aromele(coaja de portocala, zeama de lamaie) mixam bine, apoi punem folie de plastic direct pe crema (sa nu se formeze crusta) si lasam la racit aprox. 1 ora (daca aveti timp faceti crema prima).

Sunt delicioase, fine, nu foarte dulci si merg perfect pentru orice ocazie…fie chiar si o mica intalnire cu prietenele ca un ceai… 🙂
