Toffee cupcakes with meringue topping

DSCN4738   Astazi m-am intrecut pe mine!… 🤗🤗  Ca sa nu mai spun ce bucurie am facut alor mei! Au trecut ceva zile bune de cand nu i-am mai rasfatat cu ceva dulce si in ultimul timp am facut mai pentru toata lumea si mai putin pentru ei…Nu as fi crezut ca voi reusit sa fac aceasta postare de nici un fel… De mult aveam in gând sa fac aceste delicioase minuni cu caramel si mi s-a parut combinatia perfecta, sa le ornez cu o delicioasa bezea…

Imi place mult zaharul brun si in special cel foarte brun pentru ca are o aroma minunata, un pic caramelizat si il folosesc deseori  in prajiturile cu ciocolata ori caramel!

Asa dar hai sa vedeti ce am mai inventat… 😊😊❤

Dificultate: usoara

Ingrediente: 200 gr unt moale,1 cup zahar dark brown, 2 oua,esenta de vanilie, coaja rasa de lamaie, 1+1/2cups faina, 1 lingurita praf de copt,  100ml suc de portocale, 3linguri mari caramel si pentru topping bezea facuta din 3 albusuri cu 3 linguri zahar pudra

 

Mod de preparare:

 

Mixam untul cu zaharul pina devine spumos, adaugam ouăle,  unul cite unul, mixind dupa fiecare pina la incorporare totala, mai apoi adaugam mirodeniile, faina cernută in prealabil impreuna cu praful de copt alternind cu sucul de portocale…

Compozitia rezultata v-a arata cam asa…

Umplem formele cam 3/4 cu ajutorul unei lingurite si dam la cuptor pentru 30 minute la 180’C

Cind prajiturile sunt reci, scobim mijlocul si adaugam cite o lingurita de caramel in fiecare prajiturica…like this  😊

Facem bezeaua… mai exact mixam albusurile impreuna cu zaharul pina devine o spuma  ferma ce se tine de tel… Cu ajutorul unui pos ornam fiecare prajitura si la final eu am folosit o lampa pentru flambat si le-am dat un pic de culoare…insa voi le puteţi lasa simple ori orna cu ceva aschii de ciocolata…ori ce va trece prin cap… 🤗

Rezultatul final….

O combinatie minunata de caramel si bezea, o prajiturica delicioasa ce merge servita alături de o ceasca cu ceai ori o cafea, impreuna cu cei dragi…

Gânduri bune trimit catre voi, dragii mei dragi, oriunde va aflați!!! ❤❤❤😙

Vanilla cupcakes – gluten free

So as I’ve promised, we are now moving onto the second part of our three gluten free cupcakes series and that is onto this appetizing vanilla flavoured cupcake that were such a success among all attendees.

Time: 30 min.

Difficulty: Easy

Ingredients:

150gr soft butter, 100gr sugar, 3 eggs, vanilla essence, 200gr gluten free flour, baking powder and 80ml of warm milk

Ingredients for topping: 150gr butter (makes sure it is room temperature rather than out of the fridge), 300gr powder sugar, vanilla essence, 2-3 spoons of lemon juice and 30ml milk

Preparation:

Start off by mixing the butter and sugar together until they become creamy and foamy. Add the vanilla essence and then the eggs one by one and keep mixing until everything is completely incorporated. Add the milk carefully and then the sieved flour and baking powder.

Prepare the baking cups and with the help of a spoon, fill these up about three quarters (allowing space for the topping). Place in the oven for 20-25min. at 180”C. Always test with a toothpick to ensure goods are fully baked.

 

Meanwhile we have enough time to make the topping. Mix the butter until it becomes foamy and then in around 4-5 steps add the powder sugar, lemon juice and milk and then finally top everything off with a bit of vanilla essence. All this mixing will create a wonderful foamy vanilla flavoured cream that is just perfect for decorating the cupcakes.

When the cupcakes’ dough is chilled, proceed to decorate them as you wish with the help of icing pipes. I chose a basic flower like flow to the topping as I had made fondant flowers a few days beforehand.

And the final results is… tadaaaaaaaa!

         Așa cum v-am promis continui cu retetele din seria celor 3 cupcakes gluten free….:) Astăzi am onoarea să vă prezint minunile ce au facut furori printre invitați…vanilla cupcakes…

 Timp de pregătire: 30 min

  Dificultate: ușoară

Ingrediente:

  • 150 gr unt moale
  • 100 gr zahar
  • 3 ouă
  • esență vanilie
  • 200 gr făină gluten free
  • un praf de copt
  • o ceșcuță cu lapte(80ml)

Pt.toping:

  • 150 gr unt la temperatura camerei
  • 300 gr zahăr pudră
  • esență de vanilie
  • 2-3 linguri zeama de lamaie
  • 30 ml lapte

Incepem prin a mixa untul cu zaharul pina devine spumă, adaugăm esenta de vanilie și apoi ouăle pe rind pina la incorporare totala. Adaugam laptele si apoi faina care a fost cernută in prealabil cu praful de copt. Pregătim formele de brioșe si cu ajutorul unei lingure umplem cam 3/4 pe fiecare. Dăm la cuptor pentru 20-25 minute la 180”C in cuptorul incins in prealabil. Nu uitati de testul cu scobitoarea pentru orice eventualitate….

Cit timp se coc si se racesc complet briosele facem topingul după cum urmează: Mixăm untutl spumă si apoi adaugam in 4-5 etape zaharul pudră alternind cu zeama de lamaie, laptele si esența de vanilie. Ne va iesi o minunata spumă de unt cu aromă de vanilie numai bună pe ornat briosele noastre….

Cind sunt complet reci le ornăm cu ajutorul unui spriț si apoi le decorăm  după preferință…Eu am ales aceste minunate flori făcute din fondant pe care le-am pregătir cu 4-5 zile mai devreme….intr-o postare viitoare o să vă arăt cum le fac eu…

   Rezultatul final…..

Lavender cupcakes

Lavender… my darlings, I must say that I absolutely love lavender! I use it all the time and I have lavender all over in my house from lavender flowers, lavender soap and shower gel, lavender washing powder, lavender scented paper for all the wardrobes in the house to the smallest detail such as edible dried lavender flowers for tea and of course BakedTreats!

I just feel that the lavender scent brings about a strong sense of calmness and relaxation in my household and it cheers me up constantly. Not to mention that I drink lavender tea before bed as it relaxes me and my sleep becomes much more peaceful and restful. Anyway, we should move onto this delicious lavender recipe. 🙂

Difficulty: Easy

Time: 30min.

Ingredients:

Dough: 200ml milk, one spoon of dried lavender flowers, 2 cups flour, ¾ cups sugar, 80gr butter, 2 eggs and vanilla essence.

Frosting: 25ml milk, 350gr powder sugar, 100gr butter and vanilla essence.

Preparation:

Start off by mixing the butter and sugar together in a bowl until you’re left with a foamy mixture. You can then add the eggs one by one and the milk, which you mixed with the lavender flowers beforehand. Proceed to add the vanilla essence to the composition you’ve created so far and then the sieved flour and baking powder.

With the help of a spoon fill up the cupcake papers (as shown below) with the dough you’ve created. Make sure you don’t fully fill the tiny papers in order to allow enough space for the frosting. You can then proceed to bake them for approximately 15min. at a temperature of 180”C with the oven slightly opened (a very small crack).

During the baking and chilling time, you can make the frosting. Once again, in a bowl, mix the butter (which cannot be cold, but rather at room temperature) with the powder sugar. Add milk slowly, not all at once but rather with some small breaks in between and then add the vanilla essence. Make sure you mix all the ingredients well and voilà you have your frosting.

When the cupcakes dough is completely chilled, you can start decorating as you wish. I used a large mouthed piping bag to create the rose shaped frosting decoration and then I added some sugar crystals which were of course lavender scented! 🙂

   Levandaaa….dragii mei trebuie sa va spun ca iubesc levanda, da o iubesc pur si simplu in toate modurile posibile. Am peste tot in casa levanda, am flori, am sapun, gel dus, detergent de rufe cu miros de levanda, hartie parfumata pentru dulapioare cu miros de levanda  si bineinteles un saculeț generos cu flori uscate de levanda pentru ceai si prajiturirele…Levanda aduce liniste si relaxare in casa mea , ma binedispune si trebuie sa va spun ca un ceai de levanda baut inainte de culcare ma relaxeaza si am un somn profund si linistit…Asa ca a venit vremea sa fac si ceva dulce cu levanda special pentru voi ….

Dificultate: redusa

Timp de pregatire: 30 min.

Ingrediente:

  • 200 ml lapte
  • o lingurita flori uscate de levanda
  • 2 cup faina
  • 3/4 cup zahar
  • 80 gr unt
  • 2 ouă
  • esenta de vanilie

pentru frosting:

  • 25 ml lapte
  • 350 gr zahar pudra
  • 100 gr unt
  • esenta de vanilie

Intr-un bol mixam untul cu zaharul pina se spumeaza, adaugam ouăle pe rind si apoi laptele in care am pus florile de levanda . Adaugam esenta de vanilie si apoi faina cernuta in prealabil cu praful de copt.

Cu ajutorul unei lingurite punem compozitie in formele de briose cam trei sferturi sa fie pline si dam la cuptor pentru aproximativ 15 minute la 180”C in cuptorul incins in prealabil

Cit timp se coc si se racesc briosele facem spuma de unt. Mixam intr-un bol untul care trebuie sa fie la temperatura camerei cu zaharul pudra pe care in punem in 5-6 etape alternind cu laptele si esenta de vanilie. Cind briosele sunt complet reci le ornam dupa bunul plac cu spuna de unt. Eu am ales un spriț foarte mare cu care am facut trandafirași si i-am pudrat cu citeva cristale de zahar cu aroma de levanda..normal…:)

    Sunt absolut delicioase, cremoase si aromate. Va recomand sa le serviti alaturi de o ceasca cu cafea ori ceai impreuna cu cei dragi..
