Lavender cupcakes – gluten free

Well my dear bakers, we have finally reached the final post of the three gluten free cupcakes series! My personal favourite, the lavender cupcake, a recipe I’ve posted before, however this is slightly different since they are now gluten free.

Time: 30 min.
Difficulty: Easy
Ingredients: 150gr soft butter, 100gr sugar, one spoon of lavender flowers, vanilla essence, 3 eggs, 80ml buttermilk, 200gr gluten free flour and baking powder
Ingredients for topping: 200ml liquid whipped cream, 3 sugar spoons, 2 lemon juice spoons and lemon skin

Preparation: 
Firstly start by mixing the butter and sugar together until you create a foamy mixture and then one by one add the lavender flowers, the vanilla essence, the eggs and finally the buttermilk. Make sure you mix thoroughly until all ingredients are fully integrated and then proceed to add the sieved flour and baking powder to the mixture.

Prepare your baking cups and with the aid of a spoon, fill these up about three quarters and then leave in the oven for around 20-25min at 180″C.

As these are baking, we have plenty of time to prepare the topping. We simply mix all the ingredients together, that is the liquid whipped cream, the sugar, the vanilla essence, the lemon skin and the lemon juice. Place this mixture in the fridge until the plain cupcakes are chilled too.

Now comes my favourite part… decorating! I chose to sprinkle them with a few sugar crystals, lavender and on some the number 50 as they were made for the 50th birthday party I mentioned in the previous post.

Si in sfarșit cea de a treia retetă din setul celor 3 gluten free….Levanda cupcakes care pentru mine este cea mai cea dintre toate….:)

 Timp de pregatire: 30 min

Dificultate: redusă

  Ingrediente:

  • 150 gr unt moale
  • 100 gr zahar
  • o linguriță cu flori de levandă
  • esență de vanilie
  • 3 ouă
  • 80 ml lapte bătut
  • 200 gr făină gluten free
  • o linguriță prag de copt

Toping:

  • 200 ml friscă lichidă
  • 3 linguri zahar
  • 2 lingurițe zeamă de lamaie
  • coajă rasă de lamaie

Mixăm untul cu zaharul pina devine spumă, adaugăm floarea de levandă, esența de vanilie si apoi, pe rind, ouăle și laptele bătut. Mizăm pină la incorporare totala după care adaugăm făina care a fost cernută in prealabil impreună cu praful de copt.

Compoziția obținută o punem cu ajutorul unei lingure in formele de briose cam 3/4 sp fie pline. Le coacem aprooximativ 20-25 minute la 180”C in cuptorul incins in prealabil.

Cit timp se coc  briosele facem frisca, care se face extrem de simplu, adică mixăm frisca lichidă  impreuna cu toate ingredientele, zahar, esență, zeama de lamaie si  coaja de lamaie pină devine fermă. O lăsăm la rece pină sunt complet racite briosele după care le ornăm frumos….

Eu am ales să le pudrez cu citeva cristale de zahar cu levandă si pe ici pe colo am pus cifra 50..să fiu in ton cu sărbătoarea…:)

Sunt extrem de aromate si delicioase si merg perfect lingă o cafea neindulcită ori o cească cu ceai negru cu lapte….

  1. May I ask if you use fresh or dried lavender flowers? Also there are so many different kinds of gluten free flowers on the market, would you recommend using a specific kind?

    I love collecting gluten free recipes. I have SO many friends that need to eat completely gluten free. This would be a great recipe for a spring wedding.

    • Hi Mary in my garden I have a Lavandula angustifolia ‘Ellagance Purple’ an I use the flowers from it . And now I use dry flowers because I dont have any fresh flowers at the moment in my garden. I have never bought lavender flowers from the market.
